A great recipe for the classic American dish of fried rump steaks with a rich onion gravy. The steaks are dredged in flour and fried - just like fried chicken...hence the name!

  • 2 tablespoons cornflour
  • 1 1/4 teaspoons onion powder
  • 1 1/4 teaspoons garlic granules
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper

  • 4 (115g) steaks beef rump, pounded with a meat mallet
  • 30g unsalted butter
  • 2 tablespoons olive oil
  • For the gravy
  • 3 very large Spanish onions (or red onions), thinly sliced
  • 475ml beef stock
  • 250ml milk

  1. In a shallow bowl, stir together the flour, cornflour, onion powder, garlic granules, salt, black pepper and cayenne pepper until thoroughly mixed. Remove 5 tablespoons of the flour mixture and set aside. Gently press the steaks into the remaining flour mixture in the bowl until well coated on both sides.
  2. Heat butter and olive oil in a large frying pan over medium heat until the foam subsides on the butter. Gently pan-fry the steaks until the coating is browned, about 4 minutes per side. Turn only once. Remove the steaks to a plate.
  3. Spread the onions out into the frying pan with the remaining oil and butter; cook over medium heat until the onions are translucent, 5 to 7 minutes, stirring often.
  4. Sprinkle the reserved flour mixture over the onions; cook and stir for 1 more minute, then pour in the beef stock and milk. Bring the mixture to the boil, stirring constantly until the gravy is thickened.
  5. Scrape the pan well to dissolve any flavour bits left on the bottom. Return the browned steaks to the gravy mixture, then push them down into the gravy. Cover the frying pan, reduce heat to low and simmer until the steaks are very tender, about 45 minutes, stirring occasionally.

YUMMM!! I just took a taste as it is cooking right now... It smells SO good, I think my hubby will come home and be very pleased. Chicken Fried Steak

Chicken Fried Steak is a classic southern staple. You can see that I have mashed taters and gravy on that plate too. Mashed taters and gravy are a must with this meal.

These are much easier to make than some of you may think. No fancy ingredients (which is not my style anyway). Easy to make the “crust” and easy to fry in the skillet. All you need is some eggs, flour, seasoning and some cooking oil. Oh, and the meat…can’t forget the meat. How easy is that?

I made 4 steaks, but if you choose to make more, you can easily adjust the recipe down below and keep in mind that only 4 small ones will fit in the skillet, so make sure you adjust your cooking time for that.

Chicken Fried Steak Burgers with Vidalia Onion Gravy

Creamy sweet onion gravy smothered over a chicken fried steak burger patty, topped with crispy French fried onions and sandwiched between two toasted onion rolls. The ultimate “comfort burger”!

Another dish inspired by our family vacation to the South last Summer. A beloved, traditional Southern dish is chicken-fried steak smothered in gravy. Sweet onions, like Vidalia onions (a treasure of the South), make for an especially wonderful gravy. I had a craving for a burger and, being that it’s the middle of Winter right now, I wanted a meal that would satisfy that craving and also be a warming comfort dish. And so the idea of these Chicken Fried Steak Burgers with Vidalia Onion Gravy was born.

Within 30 minutes were were enjoying these marvelous Southern-style burgers. The burgers are breaded and fried and then slow-simmered in a creamy sweet onion gravy. The chicken fried burger steaks are then transferred to toasted onion rolls, piled high with that luscious onion gravy, and sprinkled with crispy French fried onions for added flavor and texture. Oh my. Yes, very oh my. Dig in folks, it’s burgers a la Southern Style!

Note, vidalia onions are a sweet onion grown in the South, but you can substitute Walla Walla onions. Let’s get to work! Combine the flour, cornstarch and seasonings. Reserve 3 tablespoons of the flour mixture.

Lightly sprinkle the patties with some salt and pepper.

Dredge the patties in the flour mixture to coat on both sides.

Heat the butter and olive oil in a large skillet over medium heat and then add the patties.

While the patties are frying you can prep the onions.

Fry those luscious burger patties until they’re generously browned on both sides, about 4 minutes per side. Transfer the patties to a warmed oven.

Add the onions to the skillet and cook until soft and translucent, 5-7 minutes.

Add the reserved seasoned flour mixture to the onions and cook for another minute.

Add the beef broth and milk, stirring constantly to prevent lumps. Increase the heat and bring it to a boil, deglazing the bottom of the pan, scraping up any browned bits.

Reduce the heat to low and simmer for a couple of minutes until the gravy is thickened. Look at that lusciousness.

Add the chicken-fried burger steaks, nestling them in the gravy, cover and simmer for 15-20 minutes. Add salt and pepper to the gravy to taste.

Place the chicken-fried burger steaks on the bottom of each toasted onion roll.


Directions

For the meat:

Cover each slice of meat with plastic wrap and pound with a meat mallet or something similar until meat is somewhat less than ¼-inch thick. (It will expand in size substantially.) Leave covered and allow to come to room temperature. When ready to cook, slice into 4 pieces, sized according to appetite.

For the wash:

Add all ingredients to a relatively large, shallow bowl and mix thoroughly.

For the dredge:

Mix all dry ingredients thoroughly in a large, shallow bowl. When blended, pour buttermilk over dry ingredients and mix with fingers. This will form small clumps that will help make the steak crispy.

For cooking:

Preheat oven to about 225 degrees and arrange a wire rack on a cookie sheet. Heat Crisco or lard on the stove in a large cast iron skillet or Dutch oven to about 375 degrees. The oil should be about an inch deep in the pan, so depending on the size of your pan it may take more or less than a cup. Dip a piece of meat in the wash covering both sides then dredge in the flour mixture until thoroughly coated and all wet spots are covered and look dry. Carefully transfer 1-2 pieces of meat to the hot oil, depending on size of each. Do not crowd the meat. Cook until golden brown on each side. This will take less than 5 minutes on the first side and around 3 minutes on the second side. Watch carefully and don’t leave your post. This is where most mistakes happen. When done, use tongs to transfer meat to wire rack and leave in the warm oven until all meat is cooked and gravy is ready. (If you don’t have a wire rack, use paper towels.) Pour off all but ¼ cup of oil and leave the residue of the steaks and breading in the pan.

For Fat Tommy’s classic cream gravy:

Warm the half and half in a separate pan or in the microwave. Heat the drippings and butter over moderate heat in the pan in which the steaks were cooked, stirring in flour until thick. Gradually add half and half until gravy is thick but pourable. Add spices and cook over low heat until blended. Taste and correct spices. Now give your honey a high five! Pour over steaks and enjoy. You will probably have enough gravy left to pour over your biscuits and mashed potatoes as well just in case your caloric intake for the day is lagging.

Variations: Sausage Gravy

This is a simple protein-supplement variation that makes spectacular gravy. Sauté ½ chopped medium sized onion until soft in the pan drippings and butter above. When almost done, add ½ pound of Jimmy Dean’s sausage pinched off into small pieces and cook until browned. Then add flour and continue as above.


Notes About Fried Cubed Steak and Gravy:

  • Chicken Fried Steak is actually beef, not chicken.
  • Fried cubed steak and gravy can be on the table in approximately 20 minutes.
  • Substitute buttermilk for the regular milk in the breading.
  • The best frying oils are canola, soybean, corn or vegetable oil (which is usually soybean oil).
  • To absorb the extra cooking oil from the chicken fried steak when done cooking, line a plate with paper towels.
  • To keep your cubed steak warm while preparing the gravy, put them on an oven-proof plate in a 200 degree F oven.
  • Be sure to add additional salt to your taste preference to your gravy before serving.

Chicken Fried Steak

Chicken Fried Steak is a classic southern staple. You can see that I have mashed taters and gravy on that plate too. Mashed taters and gravy are a must with this meal.

These are much easier to make than some of you may think. No fancy ingredients (which is not my style anyway). Easy to make the “crust” and easy to fry in the skillet. All you need is some eggs, flour, seasoning and some cooking oil. Oh, and the meat…can’t forget the meat. How easy is that?

I made 4 steaks, but if you choose to make more, you can easily adjust the recipe down below and keep in mind that only 4 small ones will fit in the skillet, so make sure you adjust your cooking time for that.

Recipe Summary

  • 2 pounds sirloin tip roast, cut into 6 3/4-inch-thick steaks
  • 1 1/2 teaspoons coarse salt
  • 1/2 teaspoon ground black pepper
  • 1 cup plus 3 tablespoons all-purpose flour
  • 1/4 teaspoon cayenne pepper
  • 1 cup buttermilk, well shaken
  • Vegetable oil, for frying
  • 3 cups milk

Place steaks on a clean work surface and pound both sides to 1/4-inch thickness with the tenderizing side of a meat mallet. Season steaks with 1 teaspoon salt and 1/4 teaspoon pepper.

Combine 1 cup flour and cayenne pepper in a wide, shallow dredging bowl and pour buttermilk into another dredging bowl. Coat steaks in flour, then buttermilk, and again in the flour. Transfer to a baking sheet lined with a cooling rack and let stand 20 minutes.

Pour oil to 1/8-inch depth into a large cast-iron skillet and heat over medium-high heat. When oil shimmers, fry the steaks in two batches, turning once, until golden brown on both sides, about 3 minutes per side. Transfer to a paper towel-lined plate to drain.

Carefully pour all but 2 tablespoons of fat from skillet and return skillet to heat. Whisk in remaining 3 tablespoons flour, cooking until bubbly and golden, 1 minute. Whisk in milk and season with remaining 1/2 teaspoon salt and 1/4 teaspoon pepper. Boil, whisking constantly, until gravy thickens slightly, 1 minute. Transfer to a gravy boat or small pitcher and serve immediately poured over steaks.

What to buy: The round cuts of beef are located on the hind leg of the cow. They tend to be tougher in texture, so look for the top round, sometimes called a London broil, which is the most tender of these cuts.

Reheating

Fried leftovers can be tough to keep crisp, therefore its necessary to have the right reheating method!

To Reheat: Preheat your oven to 400°F. Line a baking sheet with foil and place the chicken fried steaks on it. Lightly place another sheet of foil over the steaks. Bake for 20 minutes, then let them cool for 5 minutes. Check for crispiness and bake for another 5 minutes uncovered, if necessary.

Freezing

Leftover chicken fried steak will last 4 months in the freezer stored in an airtight container.

Reheating From Frozen

Allow the chicken fried steaks to thaw in the fridge overnight, then let them sit at room temp for 30 minutes before following the reheating steps listed above.
